Procedure
Lightly crack the cumin, fennel, and cloves in a mortar—just enough to release aroma.
Add the spices and ginger to 2 cups water.
Simmer on low for 8–10 minutes; cover and steep 5 minutes.
Strain into cups; let it cool slightly.
Stir in lemon or amla juice, and sweeten if desired.
